C16 Biosciences has introduced a precision-fermented cocoa butter equivalent under its Palmless brand, marking its first food ingredient, according to vegconomist. The New York company launched it alongside additions to its personal-care portfolio.
C16 says the fat is designed to give chocolate manufacturers more consistent crystallization and sensory performance than agricultural cocoa butter, whose properties can change across origins and harvests, vegconomist reported. The company also argues that fermentation could reduce exposure to disruptions and unstable pricing in cocoa supply.
The expansion brings Palmless to five commercial ingredients, according to vegconomist. C16 told the publication that its ingredients are manufactured in 50,000-litre fermentation vessels, a capacity it first attained in 2022. Founder and CEO Shara Ticku said the process can produce fats more closely matched to manufacturers’ specifications.
