Jeonbuk National University researchers evaluated a fungus-derived polysaccharide as a supplement for cultivated-beef cell culture, vegconomist reported. The team tested the material on bovine satellite cells, which serve as muscle-forming starter cells in cultivated meat production.

The study’s central finding was that the treatment helped cells retain their capacity for continued growth during extended cultivation, according to vegconomist. The publication also reported improved differentiation, when the expanded cells join together and develop into muscle fibres.

Vegconomist identified the additive as MP15R, sourced from the soil fungus Metarhizium pinghaense 15R. According to the publication, treated cells reproduced more rapidly and preserved stem-like characteristics over successive passages. The research appeared in Scientific Reports and received support from a South Korean government food-technology programme, vegconomist said.

The commercial implications remain uncertain because vegconomist provided no quantified cost reduction, dosage information or scale-up results. The publication said cell populations can eventually lose their expansion capacity, requiring manufacturers to begin again with animal biopsy material. It also identified fetal bovine serum and recombinant growth factors as major production expenses, while noting that researchers are examining seaweed polysaccharides, insulin and other alternatives.

CONCLUSION The findings add a fungal polysaccharide to the media ingredients under examination for cultivated beef. Quantified economics and evidence that the reported cellular effects persist in larger production systems are the key unanswered issues.
